We just brewed our first collaboration beer with our friends at Horse Thief Hollow. We had a couple meetings to come up with the recipe and then brewed it on their system. We decided we wanted to do something unique so we went with a Rye Saison and pitch Omega Yeast Lab’s new Saison Strain that is a cross of a Belgian and French Saison strain. We also have done some experiments with some non traditional wood species from Black Swan Cooperage and decided to do a brief aging on a blend of White Ash and Soft Maple. These woods will add some interesting flavors and complexity to the finished beer. This beer should be tapping at Horse Thief in early April, stay tuned for details.
