“Gold” is our mixed fermented Sour Golden Ale inspired by the famous Lambic beers of Belgium. This beer has spent over a year in oak barrels with our blend of bacterial and wild yeast. The resulting beer is complex and delicious. It is tart with notes of tropical fruit, stone fruits, oak, and a bit of funk.
We’re also releasing the first Foeder aged versions of “Blanc” and “Straw”. “Blanc” is our Brett Berliner Weisse that is mix fermented with Lactobacillus bacteria and our custom blend of Brettanomyces. The result is a more complex version of the style with a smoother sourness and notes of tropical fruits and citrus. The Foeder aging adds a hint of oak, drys the finish a bit, and allows the Brett to continue developing, adding complexity.
“Straw” is our Brett Saison that is mix fermented with a blend of Belgian Saison yeast and our custom blend of Brettanomyces. We’ve been experimenting with different Brett strains for over a year and used our favorites for the blend that went into our Straw Foeder. The resulting beer is bone dry with a very fruit forward Brett character with notes of pineapple, tropical fruits, citrus, a mild, earthy funk, and a slightly tart finish.
